About Dà Mhìle Distillery

Dà Mhìle Distillery is based at Glynhynod Farm near Llandysul in Ceredigion, West Wales.
Our family-run distillery forms part of a working organic farm that is also home to our sister business, Caws Teifi Cheese.

Dà Mhìle means “two thousand” in Scottish Gaelic.
The name comes from our original organic whisky project, which was created in anticipation of the new millennium.

The Dà Mhìle story began in 1992, when our founder, John Savage-Onstweddar, commissioned an organic whisky from Springbank Distillery in Scotland.
The whisky was first bottled in 1999 to celebrate the millennium and marked the beginning of Dà Mhìle.
In 2012, Dà Mhìle opened its own distillery at Glynhynod Farm in Ceredigion, allowing us to begin distilling our own organic spirits here in Wales.

Dà Mhìle commissioned what is recognised as the first organic whisky of the modern era.
In 1992, our founder commissioned Springbank Distillery in Scotland to produce an organic whisky, which was first bottled in 1999 in celebration of the millennium.
This pioneering project led to the creation of Dà Mhìle and our continuing commitment to organic distilling.

Following our original 1992 organic whisky project, Dà Mhìle commissioned another organic whisky for the millennium.
Distilled in 2000 at Loch Lomond Distillery, this became the world's first organically certified grain whisky. Some of this whisky was matured for many years before being released as our Millennium Cask Reserve.

Dà Mhìle opened its own distillery at Glynhynod Farm in 2012.
Since then, we have distilled our organic spirits here in Ceredigion, using natural spring water from the farm and producing whisky, gin and other spirits in small batches.

Dà Mhìle Welsh Whisky

Yes. Dà Mhìle distils Welsh whisky at Glynhynod Farm near Llandysul in Ceredigion, West Wales.
Our whisky is made in small batches and includes Single Malt Welsh Whisky and Single Grain Welsh Whisky, alongside occasional limited and special cask releases.

Our Single Grain Welsh Whisky is Welsh whisky but is not covered by the Single Malt Welsh Whisky UKGI specification.

Our grain whisky gives us another way to explore different grains, casks and maturation styles while retaining the small-batch character of Dà Mhìle.

Yes. Cask experimentation is an important part of Dà Mhìle whisky.
Depending on the release, our whisky may be matured or finished in casks previously used for bourbon, wine or other spirits. We have worked with casks including bourbon, peated quarter casks, Hungarian Tokaji and Muscat wine casks.
Many of these whiskies are released in small quantities, so the casks and styles available change over time.

The grain, fermentation, distillation, cask and maturation time can all influence the finished whisky.
We don't try to make every Dà Mhìle release taste exactly the same. Different casks and batches are allowed to develop their own character, which means one Dà Mhìle whisky may be quite different from another.
Dà Mhìle Gin

Yes. Dà Mhìle produces certified organic gin at our distillery at Glynhynod Farm in West Wales.
Our gins are distilled in small batches using certified organic ingredients and include established favourites alongside occasional seasonal and limited releases.

Our gin range includes Botanical Gin, Seaweed Gin, Oak-Aged Gin and Sloe Gin, alongside occasional seasonal and special releases.
Each has its own character, from traditional botanical flavours to barrel ageing and more unusual ingredients.

The seaweed contributes a distinctive savoury, maritime character and gives the gin a connection to our location in West Wales.

How We Distil

Whisky, gin, rum and other spirits are produced here in small batches using certified organic ingredients.

Our still is called Ceridwen.
She sits at the heart of Dà Mhìle Distillery at Glynhynod Farm and is used to produce our range of organic spirits.

Our still, Ceridwen, is powered by steam generated using timber felled on Glynhynod Farm.
We replant trees to replace those used, creating an almost carbon-neutral method of heating our still and allowing us to make use of a renewable resource grown here on the farm.

Dà Mhìle is a small, independent and family-run distillery.
We distil in relatively small batches and produce a combination of established spirits and limited releases rather than concentrating on large-scale production.

Small-batch production gives us the freedom to experiment with ingredients, casks and maturation.
When a particular spirit, cask or batch develops an interesting character, we may release it in limited quantities rather than attempting to reproduce it indefinitely.
That means some Dà Mhìle releases are genuine one-offs. Once they're gone, they're gone.

Glynhynod is our family farm near Llandysul in Ceredigion, West Wales.
It is home to Dà Mhìle Distillery and Caws Teifi Cheese and has been at the centre of our family's approach to organic farming and artisan food and drink production for decades.

Yes. Dà Mhìle Distillery is located on our working family farm, Glynhynod Farm.
The distillery uses natural spring water from the farm, while timber from the farm woodland is used to generate steam to heat our still.
The farm is also home to Caws Teifi Cheese and our farm shop.

Its best-known cheeses are based on a traditional Gouda-style recipe, and the dairy produces a range of artisan cheeses alongside organic cultured butter and other dairy products.

We are a small-batch distillery rather than a mass producer.
Some spirits are produced from individual casks, seasonal ingredients or limited batches. Once these have sold, exactly the same release may not be available again.

Item Whisky should normally be stored upright in a cool, dry place away from direct sunlight and large changes in temperature.
Unlike wine, whisky does not continue to mature once it has been bottled.

No. Whisky develops its character while maturing in a wooden cask.
Once bottled, the maturation process effectively stops. A properly stored unopened bottle can remain in good condition for many years, but a 10-year-old whisky kept in its bottle for another 10 years does not become a 20-year-old whisky.
